For Jenna Gestetner, this condition has been a lifelong battle, with her symptoms becoming increasingly severe over time.

From a young age, Gestetner was labeled as "sensitive," experiencing issues with her skin, stomach, and overall health. As she grew older, these symptoms only intensified, leading her to realize that certain foods were the culprit. "The more I would eat certain foods, the worse the reactions would get," she recounts, describing the debilitating pain, nausea, fatigue, and dizziness that would follow her dietary choices.

After years of confusion and frustration, Gestetner was finally diagnosed with MCAS at the age of 18. This revelation provided much-needed clarity, but also presented a new challenge – navigating the limited dietary options that came with her condition. "When I was 18, I was down to eating less than 15 foods [and] I knew I needed answers for my physical health but also my mental health," she explains, highlighting the emotional toll of such a restrictive lifestyle.

Embracing a Carefully Curated Menu

Through a process of elimination and extensive testing, Gestetner has now narrowed her safe food list down to just 13 items: white fish, turkey, green beans, zucchini, cucumber, lime, dates, grapes, raspberries, pears, chia seeds, water lily seeds, and olive oil. This carefully curated menu has become the foundation of her daily sustenance, allowing her to manage her MCAS symptoms and maintain her overall health.

Navigating the Culinary Landscape

Eating out has become a significant challenge for Gestetner, as most restaurants do not cater to her specific dietary needs. "Most restaurants don't have food I can eat, so when I am looking to eat out, I typically have to check the menus of several places before finding somewhere with something I can eat on the menu," she explains. Even then, the risk of cross-contamination is a constant concern, causing her a great deal of anxiety.

Adapting to a Routine-Driven Lifestyle

On a day-to-day basis, Gestetner has developed a consistent routine to ensure she is meeting her nutritional needs. Her typical meals include turkey and chia seed pudding for breakfast, protein with vegetables for lunch and dinner, and fruit or water lily seeds for snacks. "The important thing for me is eating enough calories as well as a balance of all the types of foods I can eat to make sure I'm getting as many essential nutrients as possible," she emphasizes, highlighting the careful planning required to maintain her health.

Despite the challenges she faces, Gestetner has chosen to focus on the positive aspects of her journey. She creates content for social media, sharing her experiences and inspiring others who may be facing similar struggles. "I love showing the positive side by creating content, such as using the foods I can eat to try all kinds of recipes," she says.
